Sa caract\u00e9ristique couleur rouge provient du paprika qui est m\u00e9lang\u00e9 avec le sel et le poivre \u00e0 la viande hach\u00e9e.<\/p>\n<p>On farcit une tripe naturelle de cette pr\u00e9paration et on la laisse s\u00e9cher pour qu&rsquo;elle fermente et perde une partie de son humidit\u00e9 initiale.
